Paired with:
White Wing: This beer rules the roost.  Brewed with authentic Belgian yeast and hints of coriander and orange peel, White Wing has all the spic and citrus aroma of a true-to-style Belgian Wheat Ale.  Slightly sweet and highly drinkable, it's a delightfully odd bird.  ABV: 4.7%  IBU: 15

Course 1

Surf and Turf Deviled Eggs: Gulf crab and BBQ pork belly infused yolks with siracha and smoked cheddar cheese

Paired with:
Kosmos: Named after founder Kosmos Spoetzl, this all-malt lager is hopjacked for additional aroma and flavor.  Robust with a clean finish, it's a beer that's every bit as unique as the man himself.  ABV: 5.0%  IBU: 18

Course 2

Wild Hare Porchetta : Roasted and rendered whole rabbit, then shredded and wrapped in its own skin with charred rosemary mayo and watercress

Paired with:
Wild hare:  The first ale in our 103-year history, this classic American Pale Ale balances Munich malts with US Golding and Bravo hops for a taste that's rich, hoppy...and a little wild.  Catch it if you can.  ABV: 5.5%  IBU: 32

Course 3

Chopped Wagyu Steak Slider: Texas wagyu chopped steak, brioche slider bun, candied malt cider bacon,House rye ale steak sauce, molten brie fondue

Paired with:
Ryes and Shine:  This small-batch Brown Lager is brewed with Rye malt and Chocolate rye from Germany along with three hop varieties.  Enjoy a taste of the old world.  ABV: 4.9%  IBU: 20

Course 4
Ultimate Pig in a Blanket: foie gras sausage wrapped in French brioche with whole grain FM966 mustard

Paired with:
FM966:  Just south of the brewery there's a road called FM 966, and now there's a beer called FM 966.  Coincidence?  All we know is that this Spring Provisional Ale made with Pilsner and Wheat malts is spicy, fruity and always hits the spot.  ABV: 5.7%  IBU: 21

Dessert

Warm Waffle Buñuelos with maple bacon ice cream and honeycomb

Paired with:
Black:  Germans call it a Schwarzbier (Black Beer), but Shiner fans know this one as Shiner 97.  Unusually smooth for a dark beer, our Bohemian Black Lager is brewed with roasted malts and Czech Saaz and Styrian Hops.  All else pales in comparison.  ABV: 4.9%  IBU: 18
