Backstory... I have competed in a two BBQ competitions. I also did a tour of Austin Texas BBQ spots a few years ago.

I ordered the brisket plate. This had a sizable amount of brisket and looked like it could be around a 1/4 lbs or more. I got the slaw and the bbq beans.

Brisket: For a food truck this is some damn good brisket. It pulled well (if folded, it did break) and had a good fat cap. The smoke flavor, I could not place. It could be post oak, maybe cherry. It had good beef flavor and was consumed with some passion.

Slaw: Maybe it is a NWA style slaw, but not my cup of tea.

Beans: Not a bold bean, but had some added molasses and brown sugar. Not too heavy on the sweet side. I would go back for seconds on these beans.

Final Words: Worth the trip.

Portion size is fair compared to the cost. The only issue I have with the place is that the open hours have been 'hit and miss'. I would say that they will stabilize as the summer approaches and the customer flow increases.
